When All Else Fails

Or maybe I should call this one: Why is Waiting Such Hard Work?

I've been waiting for so many things lately. Things that are completely out of my hands... if they were in my hands, I wouldn't be waiting. I would be making them happen. It's exhausting. I used to equate waiting with idleness. In the nearly 23 months since my accident I've come to learn that waiting is actually hard work. For me, waiting means a few different things: give yourself time to heal and/or we have no idea what's coming next so get yourself ready.

So, on days, like today, when I cannot say for certain what my plans are and I cannot for the life of me figure out what to do with my hands, I do several different things. (A) Clean my house, (B) Knit, (C) Bake gluten-free cookies. Maybe the title of this post should be: When All Else Fails - Bake Cookies.

I am waiting for these cookies to cool before frosting them... with chocolate. This is the easiest recipe on the planet, made all the more easy with the help of my roommates huge kitchen-aide mixer.

Shortbread Cookies:
Pre heat oven to 350 degrees.
mix 3 cups flour (I used rice flour)
2 cups butter or margarine
1 cup powdered sugar

Mix for at least 10 minutes until batter is creamy. It takes a long time but the kitchen-aide helps!

Drop spoonfuls of dough onto cookie sheet. Bake for 15 minutes. Let cookies sheet cool for 5 minutes before moving your freshly baked cookies to a wire rack. Let cookies cool all the way before frosting.

I'll be honest with you, the gluten-free version is really crumbly and tastes better when chilled and heavily frosted. But, when you can't remember the last time you had a cookie or anything resembling bread, it tastes pretty good.

Today I am grateful for that kitchen-aide mixer! Thanks Jeanna. I used to have to beat my dough into submission with a wimpy hand mixer.

P.S. - Since I didn't include pictures yesterday, I made sure to take a picture today.

I heat up corn tortillas in vegetable oil, like my mom used to do. I had a little bit left of a sweet potato & black bean combination that I usually make tacos with. (I'll give you that one another time) And a little bit of a rotisserie chicken that needed to be finished off and one lonely tomato. Leftovers in a taco shell.
